I’m kind of obsessed with making blondie bars. A blondie is a lighter, less messy version of the brownie. My discovery of the blondie was the moment I discovered how addictive vanilla extract is. If I come across a recipe and it includes the best extract of all time, I automatically add it to the list. That’s how I became obsessed with the Cadbury Mini Egg Blondies at Easter.
These bars are super easy to make and I found it incredibly hard to not try to eat all of them in one sitting. I also suggest that your beverage of choice with these bad boys be a nice cold glass of milk. Trust me.
Recipe: Peanut Butter Blondie Bars
Yields 12 bars (unless you slice crazy like i do, and then it accidentally yields more)
What You Need:
1 stick unsalted butter, melted
1 cup brown sugar ( I used dark, you can use either)
1 egg
1 1/2 teaspoons vanilla extract
1/4 cup creamy peanut butter
pinch of salt
1 cup flour
8 Reese’s Peanut Butter Cups, broken into chunks
What To Do:
1. Preheat oven to 350 degrees.
2. Mix melted butter, sugar, egg, and vanilla extract in mixer.
3. Mix in peanut butter, salt and flour.
4. Spoon batter into 8 x 8 greased baking dish.
5. Top the batter with the chunks of Reese’s.
6. Bake for 25 minutes and let cool before cutting.
